Weeknight Garlic Butter Steak Bites with Potatoes

Who says steak is only for special occasions? This Weeknight Garlic Butter Steak Bites with Potatoes recipe brings restaurant-worthy flavor to your table in under 30 minutes! Juicy, tender steak pieces are seared to perfection and tossed in a rich garlic butter, alongside crispy roasted potatoes. It's a comforting, hearty meal that's surprisingly simple to make, and all in one pan!

Ingredients

Yield: 4 servings

Main

  • 1.5 lbs small red potatoes, quartered
  • 2 tbsp olive oil, divided
  • ½ tsp dried rosemary (optional)
  • ½ tsp salt, divided
  • ¼ tsp black pepper, divided
  • 1 lb sirloin steak, cut into 1-inch cubes
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). In a large bowl, toss the quartered potatoes with 1 tablespoon of olive oil, dried rosemary (if using), ¼ tsp salt, and ⅛ tsp black pepper. Spread them in a single layer on a large sheet pan or in an oven-safe skillet.

  2. Step 2

Roast potatoes for 15 minutes, or until just tender. Meanwhile, prepare the steak.

  3. Step 3

Pat steak cubes dry with paper towels. Season with the remaining ¼ tsp salt and ⅛ tsp black pepper. Drying the steak is key for a good sear!

  4. Step 4

Once potatoes are almost done, heat the remaining 1 tablespoon of olive oil in a large skillet (if not using the same one as the potatoes, ensure it’s oven-safe if doing steps 2-3 in one pan) over medium-high heat until shimmering hot.

  5. Step 5

Add steak in a single layer, making sure not to overcrowd the pan (cook in batches if necessary). Sear for 1.5-2 minutes per side until beautifully browned. The steak should still be slightly rare in the center as it will cook a bit more.

  6. Step 6

Reduce heat to low. Add unsalted butter and minced garlic to the skillet. Stir constantly for 30-60 seconds, allowing the butter to melt and the garlic to become fragrant. Toss the steak bites in the garlic butter to coat.

  7. Step 7

If using a single oven-safe skillet: Add the seared steak bites and garlic butter directly to the skillet with the roasted potatoes. Toss gently to combine. If using separate pans, combine the steak and potatoes in a serving dish.

  8. Step 8

Garnish with fresh chopped parsley (if using) and serve immediately.

Tips

  • For best results, use a cast iron skillet for searing the steak to get a great crust.
  • Don't overcrowd the pan when searing the steak; this allows for browning, not steaming.
  • Feel free to add other vegetables like bell peppers or onions to roast alongside the potatoes.
