Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes (about 1.5 lbs), peeled and diced into 1/2-inch cubes
- 1 cup beef broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1/2 cup frozen peas (optional)
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- 1 cup shredded cheddar cheese (or a blend like Colby Jack)
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Preparation
Step 1
Heat olive oil in a large oven-safe skillet (cast iron works beautifully) over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat and remove beef from skillet, set aside.
Step 2
Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
Step 3
Stir in the diced potatoes, beef broth, diced tomatoes (undrained), thyme, and smoked paprika. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, or until potatoes are tender.
Step 4
Return the cooked ground beef to the skillet. Stir in the frozen peas (if using) and cook for another 2-3 minutes, uncovered, until peas are heated through and the liquid has slightly reduced.
Step 5
Preheat your broiler. Evenly sprinkle the shredded cheese over the top of the beef and potato mixture in the skillet.
Step 6
Place the skillet under the broiler for 2-4 minutes, watching carefully, until the cheese is melted and bubbly and lightly golden. Remove from broiler.
Step 7
Let rest for a few minutes, then garnish with fresh chopped parsley before serving directly from the skillet. Season with salt and black pepper to taste.
Tips
- For extra flavor, use russet or Yukon gold potatoes; they hold their shape well.
- If you don't have an oven-safe skillet, you can transfer the mixture to a baking dish before adding cheese and broiling.
- A dash of Worcestershire sauce added with the beef broth can deepen the savory notes.
