For the Meatballs
- 1 lb ground beef (80/20 or 85/15)
- ½ cup breadcrumbs (panko or regular)
- 1 large egg
- ¼ cup finely chopped yellow onion
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
For the Honey Garlic Sauce
- ½ cup honey
- ¼ cup soy sauce
- 2 cloves garlic, minced
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1 tsp grated fresh ginger (optional)
For the Sheet Pan
- 1 large head of broccoli, cut into florets
- 1 tbsp olive oil
- Salt and pepper to taste
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
Step 2
In a large bowl, combine ground beef, breadcrumbs, egg, chopped onion, garlic powder, salt, and pepper. Mix gently until just combined (don't overmix!). Roll into 1-inch meatballs and place on one half of the prepared baking sheet.
Step 3
In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, and ginger (if using) to make the honey garlic sauce.
Step 4
In another bowl, toss broccoli florets with olive oil, salt, and pepper. Arrange broccoli on the other half of the baking sheet.

Brush about half of the honey garlic sauce over the meatballs. Reserve the rest. Bake for 15 minutes.

Remove the baking sheet from the oven. Gently flip the meatballs and brush with the remaining sauce. Toss the broccoli slightly. Return to the oven and bake for another 10-15 minutes, or until meatballs are cooked through (internal temp 160°F/71°C) and broccoli is tender-crisp and slightly charred.
