For the Meatballs
- 1 lb ground beef (80/20 or 85/15)
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp ginger powder
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Sauce
- 1/2 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tbsp rice vinegar (optional)
- 1 tsp sesame oil (optional)
- 1 tbsp cornstarch, dissolved in 2 tbsp cold water
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2
In a large bowl, combine all meatball ingredients. Mix gently until just combined (don't overmix!). Roll into 1-inch meatballs and place them on the prepared baking sheet.

Bake for 15-18 minutes, or until cooked through and lightly browned.

While meatballs bake, prepare the sauce: In a small saucepan, whisk together honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Bring to a simmer over medium heat.

Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens, about 2-3 minutes. Remove from heat.
Step 6
Once meatballs are cooked, transfer them to the saucepan with the sauce. Toss gently to coat evenly. Serve immediately.
