- 1 lb flank steak or sirloin steak, thinly sliced against the grain

- 4 cups broccoli florets
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- Cooked rice or noodles, for serving

Preparation
Step 1
Prepare the sauce: In a medium bowl, whisk together beef broth, soy sauce, oyster sauce (if using), brown sugar, rice vinegar, sesame oil, and cornstarch until smooth. Set aside.
Step 2
Pat the sliced beef dry with paper towels. Heat olive oil in a large skillet or wok over medium-high heat. Add the beef in a single layer (cook in batches if necessary to avoid overcrowding) and sear for 2-3 minutes per side until browned. Remove beef from the skillet and set aside.
Step 3
Add broccoli florets to the same skillet. If the skillet seems dry, add another splash of oil or a tablespoon of water to help steam. Cook for 3-5 minutes, stirring occasionally, until the broccoli is bright green and tender-crisp. Add minced garlic and grated ginger during the last minute of cooking, stirring until fragrant.
Step 4
Return the seared beef to the skillet with the broccoli. Give the prepared sauce a quick whisk (it may have separated) and pour it over the beef and broccoli.

Stir everything together constantly for 1-2 minutes, allowing the sauce to thicken and coat all ingredients. The sauce will become glossy.

Remove from heat. Serve immediately over cooked rice or noodles, garnished with sesame seeds and sliced green onions if desired.
