This Sheet Pan Mediterranean Meatballs recipe brings together juicy, seasoned meatballs and a medley of fresh vegetables, all roasted to perfection on a single sheet pan. It's minimal cleanup, maximum flavor, and perfect for a healthy weeknight meal.

Ingredients

Yield: 4 servings

For the Meatballs

  • 1 lb ground beef (or turkey/lamb)
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped fresh parsley
  • 1 large egg, beaten
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper to taste

For the Veggies

  • 1 red bell pepper, cored and cut into 1-inch pieces
  • 1 zucchini, cut into 1/2-inch thick half-moons
  • 1/2 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper to taste

For Serving (Optional)

  • Tzatziki sauce or plain Greek yogurt
  • Pita bread or rice
  • Fresh dill or parsley

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

In a medium bowl, combine ground beef, breadcrumbs, parsley, egg, oregano, cumin, garlic powder, salt, and pepper. Mix gently until just combined (don't overmix!). Roll the mixture into 1-inch meatballs.

  3. Step 3

On the prepared baking sheet, arrange the red bell pepper, zucchini, red onion, and cherry tomatoes. Drizzle with olive oil, sprinkle with oregano, salt, and pepper. Toss to coat evenly.

  4. Step 4

Place the meatballs evenly among the vegetables on the baking sheet, ensuring everything is in a single layer.

  5. Step 5

Roast for 20-25 minutes, or until the meatballs are cooked through and browned, and the vegetables are tender-crisp and slightly caramelized. Halfway through cooking, give the pan a gentle shake or stir.

  6. Step 6

Serve hot with a dollop of tzatziki or Greek yogurt, and warm pita bread or rice if desired. Garnish with fresh dill or parsley.

Tips

  • Don't overmix the meatball mixture, as this can lead to tough meatballs.
  • Feel free to customize the vegetables based on what you have on hand – eggplant, mushrooms, or even broccoli florets would work well.
  • For an extra punch of flavor, squeeze a lemon over the roasted dish before serving.
