Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1/2 head green cabbage, cored and chopped into 1-inch pieces
- 1 (14.5 oz) can diced tomatoes, undrained
- 1/2 cup beef broth
- 1 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tsp dried dill weed (optional, but recommended)
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
Step 2
Add chopped onion to the skillet with the beef and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
Step 3
Add chopped cabbage to the skillet. Cook, stirring occasionally, for 5-7 minutes until the cabbage starts to soften and wilt.
Step 4
Stir in diced tomatoes (undrained), beef broth, apple cider vinegar, Worcestershire sauce, dried dill weed (if using), and smoked paprika. Bring the mixture to a simmer.
Step 5
Reduce heat to low, cover, and let simmer for 10-15 minutes, or until cabbage is tender and the flavors have melded. Stir occasionally.
Step 6
Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh parsley if desired and serve warm.
Tips
- For a richer flavor, use a good quality beef broth.
- If you like a little heat, add a pinch of red pepper flakes with the garlic.
- This skillet is delicious served on its own, or with a side of crusty bread, rice, or mashed potatoes.
