Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 head green cabbage, thinly sliced or chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: Cooked rice or noodles for serving
  • Optional: Fresh parsley, chopped, for garnish

Preparation

  1. Step 1

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.

  2. Step 2

Add chopped onion to the skillet and cook for 5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.

  3. Step 3

Add the sliced cabbage to the skillet. Cook, stirring frequently, for 5-7 minutes until the cabbage starts to wilt and soften.

  4. Step 4

Stir in the diced tomatoes (with their liquid), beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Bring the mixture to a simmer.

  5. Step 5

Reduce heat to low, cover, and let it simmer for 10-15 minutes, or until the cabbage is tender and flavors have melded, stirring occasionally.

  6. Step 6

Taste and adjust seasoning as needed. Serve hot, optionally over cooked rice or noodles, and garnished with fresh parsley.

Tips

  • For a bit of richness, stir in a spoonful of sour cream or cream cheese at the end.
  • If you like a little heat, add a pinch of red pepper flakes with the other seasonings.
  • Make sure to drain the beef well after browning to prevent the dish from becoming greasy.
