For the Beef
- 1 lb flank steak or sirloin, thinly sliced against the grain
- 1 tbsp cornstarch
- 1 tbsp soy sauce
- 1 tsp sesame oil
For the Sauce
- 1/2 cup beef broth
- 1/4 cup soy sauce
- 2 tbsp oyster sauce (optional, but recommended)
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
For the Stir-Fry
- 2 tbsp vegetable oil, divided
- 4 cups broccoli florets
- 1/4 cup water
- Cooked rice, for serving
- Sesame seeds and sliced green onions, for garnish (optional)
Preparation
Step 1
Marinate the beef: In a medium bowl, combine sliced beef with 1 tbsp cornstarch, 1 tbsp soy sauce, and 1 tsp sesame oil. Toss to coat and set aside for at least 10 minutes (or up to 30 minutes in the fridge).
Step 2
Prepare the sauce: In a small bowl, whisk together beef broth, 1/4 cup soy sauce, oyster sauce (if using), brown sugar, rice vinegar, grated ginger, and minced garlic. Set aside.
Step 3
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and 1/4 cup water. Cover and steam for 3-4 minutes, or until bright green and crisp-tender. Remove broccoli and set aside.
Step 4
Add the remaining 1 tbsp vegetable oil to the skillet. Increase heat to high. Add the marinated beef in a single layer (cook in batches if necessary to avoid overcrowding) and stir-fry for 2-3 minutes until browned and cooked through. Remove beef from the skillet and set aside.
Step 5
Lower heat to medium. Pour the prepared sauce mixture into the skillet. Bring to a simmer, then whisk in the cornstarch slurry. Cook, stirring constantly, for 1-2 minutes until the sauce thickens.
Step 6
Return the cooked beef and broccoli to the skillet. Toss to coat everything evenly in the sauce. Cook for 1 minute to heat through.
Step 7
Serve immediately over cooked rice, garnished with sesame seeds and green onions if desired.
