Ready in just fifteen minutes, this speedy skillet dinner delivers big, bold flavors with minimal effort. Browned beef cooks in a soy, garlic, and ginger sauce that is irresistible spooned over steaming white rice.
Ingredients
Yield: 4 servings
Main
- 1 lb lean ground beef (85/15 or 90/10)
- 4 cloves garlic, minced
- 1 tbsp freshly grated ginger
- 1/3 cup low-sodium soy sauce
- 3 tbsp packed light brown sugar
- 1 tbsp toasted sesame oil
- 1/2 tsp crushed red pepper flakes
- 4 cups cooked warm jasmine rice
- 1 Persian cucumber, thinly sliced
- 3 scallions, green and white parts sliced
- 1 tbsp toasted sesame seeds
- Sriracha for drizzling (optional)
Preparation
Step 1
In a small measuring cup, whisk together soy sauce, brown sugar, sesame oil, and red pepper flakes until sugar is dissolved.
Step 2
Heat a large skillet over medium-high heat. Add ground beef and cook, breaking up with a wooden spoon, until browned and cooked through, about 5 to 6 minutes. Drain excess liquid if needed.
Step 3
Add minced garlic and grated ginger to the beef; cook for 1 minute until fragrant.
Step 4
Pour the soy sauce mixture over the beef. Simmer for 2 to 3 minutes, stirring constantly, until sauce is absorbed and the beef is sticky and glazed.
Step 5
Divide warm jasmine rice into four bowls. Top with glazed beef, sliced cucumbers, sliced scallions, and toasted sesame seeds. Serve with a squirt of Sriracha if desired.
Tips
- For a leaner meal, ground turkey or chicken works equally well with the exact same sauce measurements.
- A fried egg with a runny yolk on top takes this bowl over the top.
