For the Meatballs
- 1 lb ground beef (80/20 or 85/15)
- ½ cup breadcrumbs (panko or regular)
- ¼ cup milk
- 1 large egg
- 2 cloves garlic, minced

For the Honey Garlic Sauce
- ⅓ cup honey
- ¼ cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sriracha (optional, for heat)
- 1 tbsp cornstarch
- 2 cloves garlic, minced
For the Green Beans & Assembly
- 1 lb fresh green beans, trimmed
- 1 tbsp olive oil
- Salt and pepper to taste
- Sesame seeds and sliced green onions, for garnish (optional)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
Step 2
In a medium bowl, gently combine ground beef, breadcrumbs, milk, egg, 2 cloves minced garlic, salt, and pepper. Mix until just combined; do not overmix. Form into about 18-20 meatballs (about 1.5 inches each).
Step 3
In a small bowl, whisk together all honey garlic sauce ingredients (honey, soy sauce, rice vinegar, sriracha, cornstarch, 2 cloves minced garlic) until smooth. Set aside.
Step 4
On the prepared baking sheet, arrange meatballs in a single layer. In a separate bowl, toss green beans with olive oil, salt, and pepper. Add green beans to the same baking sheet, around the meatballs, ensuring they are in a single layer.
Step 5
Bake for 15 minutes. Remove the baking sheet from the oven. Pour about half of the honey garlic sauce over the meatballs and green beans, tossing gently to coat. Return to the oven and bake for another 5-10 minutes, or until meatballs are cooked through and the sauce is thickened and caramelized.
Step 6
Garnish with sesame seeds and green onions if desired. Serve immediately, perhaps with rice or quinoa.
