- 2 tbsp soy sauce
- 1 tbsp rice vinegar

- 1 large head of broccoli, cut into florets
- 1 tbsp olive oil
- Salt and pepper to taste
- Cooked rice or quinoa, for serving
- Sesame seeds and sliced green onions, for garnish (optional)
Preparation
Step 1
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2
In a medium bowl, gently combine the ground beef, breadcrumbs, egg, 2 minced garlic cloves, chopped onion/shallot, 1/2 tsp salt, and 1/4 tsp black pepper. Do not overmix. Form into 1-inch meatballs and place them evenly spaced on one half of the prepared baking sheet.
Step 3
In a small bowl, whisk together the honey, soy sauce, rice vinegar, 2 minced garlic cloves (for sauce), and grated ginger (if using).

In a separate bowl, toss the broccoli florets with 1 tablespoon olive oil, salt, and pepper. Arrange the broccoli on the other half of the baking sheet, beside the meatballs.

Pour about half of the honey garlic sauce over the meatballs. Reserve the rest of the sauce for later.

Bake for 15 minutes. Remove the baking sheet from the oven. Carefully flip the meatballs and toss the broccoli. Pour the remaining honey garlic sauce over both the meatballs and broccoli, ensuring everything is coated.

Return to the oven for another 10-15 minutes, or until the meatballs are cooked through (internal temperature 160°F/71°C) and the broccoli is tender-crisp with slightly charred edges. The sauce should be sticky and caramelized.
