Ingredients
Yield: 4 servings
For the Meatballs
- 1 lb ground beef (80/20 or 85/15)
- 1/4 cup panko breadcrumbs
- 1 large egg, lightly beaten
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1/2 tsp ground ginger
- 1/4 tsp black pepper
For the Sauce
- 1/2 cup soy sauce
- 1/2 cup water
- 1/4 cup honey
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger (or 1 tsp ground)
- 1 tbsp cornstarch
- 2 tbsp cold water (for cornstarch slurry)
For Serving (optional)
- Cooked rice or noodles
- Toasted sesame seeds
- Sliced green onions
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2
In a medium bowl, gently combine all meatball ingredients: ground beef, panko, egg, minced garlic, soy sauce, ginger, and black pepper. Mix until just combined, don't overmix. Roll into 1-inch meatballs and place on the prepared baking sheet.
Step 3
Bake meatballs for 15-20 minutes, or until cooked through and lightly browned.
Step 4
While meatballs bake, prepare the sauce: In a small saucepan, whisk together soy sauce, water, honey, brown sugar, minced garlic, and grated ginger. Bring to a simmer over medium heat.
Step 5
In a small cup, whisk together cornstarch and 2 tablespoons cold water to create a slurry. Pour the slurry into the simmering sauce, whisking constantly. Cook for 1-2 minutes, stirring, until the sauce thickens and becomes glossy.
Step 6
Add the cooked meatballs to the saucepan with the sauce, tossing gently to coat them completely.
Step 7
Serve hot over rice or noodles, garnished with sesame seeds and sliced green onions, if desired.
Tips
- For an even quicker meal, use frozen pre-cooked meatballs (just add them to the sauce once thawed).
- Don't overmix the meatball mixture, as this can make them tough.
- The sauce is fantastic on chicken or tofu too! Double it if you like extra sauce.
