Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb lean ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can tomato sauce
- 1 (14.5 oz) can diced tomatoes, undrained
- 2 cups beef broth
- 1 tsp dried Italian seasoning
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 8 oz egg noodles (medium or wide)
- 1/2 cup shredded cheddar cheese or mozzarella cheese, for topping
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and chopped onion, breaking up the beef with a spoon. Cook until beef is browned and onion is softened, about 6-8 minutes. Drain any excess fat.
Step 2
Stir in minced garlic and cook for 1 minute until fragrant.
Step 3
Pour in tomato sauce, diced tomatoes (with their liquid), beef broth, Italian seasoning, salt, and pepper. Stir well to combine. Bring the mixture to a simmer.
Step 4
Add the egg noodles to the skillet, stirring to submerge them in the liquid. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until the noodles are tender and most of the liquid has been absorbed.
Step 5
Remove from heat. Sprinkle shredded cheese over the top, cover again, and let sit for 3-5 minutes, or until the cheese is melted and gooey. Garnish with fresh parsley if desired and serve hot.
Tips
- Don't worry if the noodles seem a bit saucy when you first uncover; they will continue to absorb liquid as they rest.
- Adjust the seasonings to your liking – a pinch of red pepper flakes adds a nice subtle heat.
- If you don't have egg noodles, small pasta shapes like elbow macaroni or rotini can also work, but cooking times may vary slightly.
