Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 lb ground beef (80/20 or 85/15 recommended)
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1/2 cup heavy cream (or half-and-half)
  • 4 oz wide egg noodles, uncooked
  • 1 tsp dried Italian seasoning
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tbsp fresh parsley, chopped (for garnish)

Preparation

  1. Step 1

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.

  2. Step 2

Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.

  3. Step 3

Stir in the diced tomatoes (with their juice), beef broth, heavy cream, uncooked egg noodles, Italian seasoning, smoked paprika, salt, and pepper. Bring the mixture to a simmer.

  4. Step 4

Reduce heat to medium-low, cover, and cook for 10-12 minutes, stirring occasionally, until the noodles are tender and most of the liquid has been absorbed.

  5. Step 5

Stir in the Parmesan cheese until melted and creamy. Taste and adjust seasonings as needed.

  6. Step 6

Serve hot, garnished with fresh parsley and extra Parmesan cheese if desired.

Tips

  • For a richer flavor, use a good quality beef broth.
  • If the sauce gets too thick while cooking, add a splash more beef broth or water.
  • Add a handful of fresh spinach at the end for an extra boost of greens, letting it wilt into the sauce.
