  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 3 cups beef broth
  • 2 cups egg noodles (uncooked)
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 1 cup shredded cheddar cheese (or mozzarella/Monterey Jack)
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Preparation

  1. Step 1

    Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.

    Add diced onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic and Italian seasoning, and cook for another minute until fragrant.

    Stir in diced tomatoes (with their juices), tomato sauce, and beef broth. Bring the mixture to a simmer.

  4. Step 4

    Add uncooked egg noodles to the skillet, stirring to submerge them in the liquid. Reduce heat to medium-low, cover, and cook for 10-12 minutes, or until noodles are tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.

  5. Step 5

    Remove from heat. Stir in sour cream until well combined. Sprinkle shredded cheese over the top, cover for 2-3 minutes to allow cheese to melt, or place under a broiler for a minute or two until bubbly (watch carefully!).

  6. Step 6

    Season with salt and pepper to taste. Garnish with fresh parsley if desired, and serve warm.
