  • 4 cups shredded green cabbage (about 1/2 a small head)

  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp brown sugar
  • 1/2 tsp ginger powder (or 1 tsp fresh grated ginger)
  • 8 oz egg noodles, cooked according to package directions
  • Salt and black pepper to taste
  • Fresh chives or green onions, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat and set beef aside.

    Add chopped onion to the same skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.

    Add shredded cabbage to the skillet. Cook, stirring occasionally, until cabbage starts to soften, about 5-7 minutes. It will reduce significantly in volume.

    While cabbage cooks, whisk together beef broth, soy sauce, apple cider vinegar, brown sugar, and ginger powder in a small bowl.

    Return cooked beef to the skillet with the cabbage. Pour in the sauce mixture and bring to a simmer. Cook for 2-3 minutes, allowing the sauce to thicken slightly.

    Add the cooked egg noodles to the skillet. Toss everything together until the noodles are well coated and heated through. Season with salt and pepper to taste. Garnish with fresh chives or green onions if desired, and serve immediately.
