  • 1 lb pork tenderloin, cut into 1-inch pieces
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 large bell pepper (any color), chopped
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • Cooked rice, for serving

For the Sauce

  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp sriracha (or to taste)
  • 1/2 cup chicken broth

Preparation

  1. Step 1

    In a medium bowl, toss the pork tenderloin pieces with cornstarch, 1 tbsp soy sauce, and sesame oil. Set aside.

  2. Step 2

    In a small bowl, whisk together all sauce ingredients (ketchup, brown sugar, rice vinegar, soy sauce, sriracha, and chicken broth). Set aside.

  3. Step 3

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the pork and cook for 3-4 minutes, stirring occasionally, until browned on all sides. Remove pork from the skillet and set aside.

  4. Step 4

    Add the chopped bell pepper and onion to the same skillet. Cook for 5-7 minutes, stirring, until softened. Add the minced garlic and grated ginger, and cook for another minute until fragrant.

  5. Step 5

    Return the cooked pork to the skillet. Pour in the prepared sauce. Bring to a simmer and cook for 2-3 minutes, stirring, until the sauce thickens and coats the pork and vegetables.

  6. Step 6

    Serve immediately over cooked rice.

Tips

  • Adjust the amount of sriracha to your preferred spice level.
  • For extra veggies, add broccoli florets or snap peas during the last few minutes of cooking with the peppers.
