Thick pork chops get an irresistible golden crust before simmering in an aromatic, apple cider pan sauce. Tender sautéed apples and fresh rosemary balance the savory richness for a cozy autumn-inspired feast.
Ingredients
Yield: 4 servings
Main
- 4 bone-in pork chops (about 1-inch thick)
- 1 tbsp olive oil
- 2 tbsp unsalted butter, divided
- 2 Honeycrisp or Granny Smith apples, cored and thinly sliced
- 1 small shallot, finely chopped
- 3/4 cup fresh apple cider
- 1/3 cup low-sodium chicken broth
- 1 tbsp Dijon mustard
- 1 tbsp fresh rosemary, finely chopped
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
Preparation
Step 1
Pat pork chops dry with paper towels and season both sides thoroughly with kosher salt and black pepper.
Step 2
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear the pork chops for 4 to 5 minutes per side until golden brown. Transfer to a plate.
Step 3
Add the remaining 1 tablespoon of butter to the skillet along with the sliced apples and chopped shallot. Sauté for 4 minutes until apples begin to soften around the edges.
Step 4
Pour in apple cider, chicken broth, Dijon mustard, and chopped rosemary. Bring to a rapid simmer, scraping up any browned fond from the pan floor.
Step 5
Nestle the pork chops and any rested juices back into the skillet. Simmer for 4 to 5 minutes until the sauce reduces slightly and pork registers 145°F on an instant-read thermometer.
Tips
- Use bone-in pork chops; the bone keeps the meat exceptionally moist during searing.
- Pair with creamy mashed potatoes to capture all of the spiced cider pan sauce.
