  • 1 lb smoked sausage (like kielbasa or chicken sausage), cut into 1-inch pieces
  • 1 lb broccoli florets
  • 1 red bell pepper, cored and chopped into 1-inch pieces
  • 1 zucchini, cut into 1/2-inch half-moons
  • 1/2 red onion, cut into wedges

For the Dressing

  • 3 tbsp olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the sausage, broccoli, red bell pepper, zucchini, and red onion. Make sure all ingredients are roughly the same size for even cooking.
