- 1 (1-1.5 lb) pork tenderloin, trimmed
- 1 lb small potatoes (such as creamer or fingerling), halved or quartered
- 1 lb broccoli florets
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
Step 2
In a large bowl, combine the halved potatoes and broccoli florets. In a small bowl, whisk together olive oil, minced garlic, Italian seasoning, salt, and pepper.

Pour about half of the olive oil mixture over the potatoes and broccoli. Toss well to coat evenly.
Step 4
Place the seasoned vegetables on one half of the prepared baking sheet in a single layer. Reserve the bowl.
Step 5
Place the pork tenderloin in the same bowl used for veggies. Pour the remaining olive oil mixture over the pork, rubbing it in to coat all sides.
Step 6
Place the seasoned pork tenderloin on the other half of the baking sheet, nestled amongst the vegetables. Ensure everything is in a single layer to promote even cooking.
Step 7
Roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the vegetables are tender and lightly browned. If vegetables need more time, you can remove the pork to a cutting board to rest, and continue roasting veggies for an extra 5-10 minutes.
Step 8
Let pork rest for 5 minutes before slicing. Slice the pork tenderloin into medallions. Serve immediately with the roasted vegetables. Garnish with fresh parsley if desired.

- Don't overcrowd the pan! If your baking sheet is too small, use two to ensure vegetables crisp up instead of steam.
