Hearty Sausage and Broccoli Ragu Over Polenta

Imagine coming home to a cozy bowl of this hearty ragu! Italian sausage and tender broccoli florets marry beautifully in a rich tomato sauce, then get spooned over a bed of luscious, cheesy polenta. It's comfort food at its finest, perfect for a satisfying dinner that feels special but is totally approachable.

Ingredients

Yield: 4 servings

For the Ragu

  • 1 tbsp olive oil
  • 1 lb Italian sausage (sweet or spicy), casings removed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken or vegetable broth
  • 1 head broccoli, cut into small florets
  • 1/2 tsp dried oregano
  • Pinch of red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley, for garnish

For the Creamy Polenta

  • 4 cups water or milk
  • 1 cup instant or quick-cooking polenta
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt to taste

Preparation

  1. Step 1

Heat olive oil in a large Dutch oven or deep skillet over medium-high heat. Add the Italian sausage (without casings) and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat, leaving about 1 tablespoon in the pan.

  2. Step 2

Add the chopped onion to the skillet and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

  3. Step 3

Stir in the diced tomatoes (undrained), chicken broth, broccoli florets, dried oregano, and red pepper flakes (if using). Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, stirring occasionally, until the broccoli is tender and the flavors have melded.

  4. Step 4

While the ragu simmers, prepare the polenta. In a medium saucepan, bring 4 cups of water or milk to a boil. Gradually whisk in the polenta in a thin stream to prevent lumps. Reduce heat to low and cook, stirring frequently, for 5-7 minutes (or according to package directions for quick-cooking polenta), until creamy and thickened.

  5. Step 5

Remove polenta from heat and stir in the Parmesan cheese, butter, and salt to taste. Keep warm.

  6. Step 6

Season the ragu with salt and black pepper to taste. Ladle the creamy polenta into bowls and top generously with the hearty sausage and broccoli ragu. Garnish with fresh basil or parsley and serve warm.

Tips

  • Use leftover ragu as a sauce for pasta the next day for a delicious twist.
  • If the polenta gets too thick, add a splash of warm water or milk to loosen it up.
