- 1 lb large shrimp, peeled and deveined
- 1 lb broccoli florets, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Juice of 1/2 lemon
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- Lemon wedges, for serving
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2
In a large bowl, combine broccoli florets with 1 tablespoon of olive oil, half of the minced garlic, oregano, a pinch of salt, and pepper. Toss to coat evenly. Spread the broccoli in a single layer on one half of the prepared baking sheet.
Step 3
Roast the broccoli for 8-10 minutes, or until it starts to become tender-crisp.
Step 4
While the broccoli roasts, combine the shrimp in the same bowl (no need to clean) with the remaining 1 tablespoon of olive oil, remaining minced garlic, lemon juice, red pepper flakes (if using), a pinch of salt, and pepper. Toss to coat.
Step 5
Remove the baking sheet from the oven. Add the seasoned shrimp to the other half of the baking sheet, spreading them in a single layer.
Step 6
Return the baking sheet to the oven and roast for another 5-7 minutes, or until the shrimp are pink and opaque and the broccoli is tender. Be careful not to overcook the shrimp, as they can become rubbery quickly.
Step 7
Serve immediately with lemon wedges and a sprinkle of fresh parsley, if desired. Great on its own or with rice.
