- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped

- 3 tbsp olive oil
- Juice of 1/2 lemon
- 1 tbsp red wine vinegar
- 1/2 tsp dried oregano
- Salt and pepper to taste
Preparation
Step 1
Marinate the chicken: In a medium bowl, combine chicken pieces with 2 tbsp olive oil, juice of 1/2 lemon, 1 tsp dried oregano, garlic powder, salt, and pepper. Toss to coat. Let sit for at least 10 minutes while you prep other ingredients, or up to 30 minutes in the fridge.

Cook the couscous: Place dry couscous in a heatproof bowl. Pour hot water or broth over the couscous, cover with a lid or plate, and let sit for 5 minutes, or until all liquid is absorbed and couscous is fluffy. Fluff with a fork.

Cook the chicken: Heat a large skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove from heat.

Prepare the dressing: In a small bowl, whisk together 3 tbsp olive oil, juice of 1/2 lemon, red wine vinegar, 1/2 tsp dried oregano, salt, and pepper.
