- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces

- 1.5 cups long-grain white rice, rinsed
- 1/2 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp paprika
- 2.5 cups chicken broth
- 1/2 cup frozen peas (optional)
- Fresh parsley, chopped, for garnish
- Salt and black pepper to taste
Preparation
Step 1
Heat olive oil in a large, deep skillet with a lid (or Dutch oven) over medium-high heat. Season chicken pieces with salt and pepper, then add to the skillet and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
Step 2
Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic, oregano, thyme, and paprika; cook for 1 minute until fragrant.

Stir in the rinsed rice, coating it in the aromatics for 1-2 minutes. Pour in the chicken broth and bring to a boil. Scrape up any browned bits from the bottom of the pan.
Step 4
Return the chicken to the skillet, nestling it into the rice and broth. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
Step 5
Remove from heat and let stand, covered, for 5 minutes. If using, stir in frozen peas.
Step 6
Fluff rice with a fork, taste, and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
