- 1 (15-ounce) can sweet corn, drained (or 1.5 cups frozen, thawed)
- 1 red bell pepper, finely diced
- 1/2 red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1-2 jalapeño, seeded and minced (optional, for heat)
Lime Vinaigrette
- 3 tbsp olive oil
- 2 tbsp fresh lime juice
- 1 tbsp apple cider vinegar
- 1 tsp honey or maple syrup
- 1/2 tsp ground cumin
- 1/4 tsp salt
- Pinch of black pepper

In a large bowl, combine the rinsed and drained black beans, drained corn, diced red bell pepper, diced red onion, chopped cilantro, and minced jalapeño (if using).
