  • 2 lbs small potatoes (such as baby Yukon Gold or red potatoes), quartered or cut into 1-inch pieces
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (optional, for garnish)
  • Salt and freshly ground black pepper, to taste

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

  2. Step 2

    In a large bowl, combine the quartered potatoes with olive oil, minced garlic, salt, and pepper. Toss until the potatoes are evenly coated.

  3. Step 3

    Spread the potatoes in a single layer on the prepared baking sheet. Ensure they are not overcrowded, as this will prevent them from crisping up.

  4. Step 4

    Roast for 20 minutes, then remove from the oven and carefully flip the potatoes. Sprinkle evenly with grated Parmesan cheese.

  5. Step 5

    Return to the oven and continue roasting for another 10-15 minutes, or until the potatoes are tender in the center and golden-brown and crispy on the outside. The Parmesan should be melted and slightly crispy.

    Remove from oven, garnish with fresh parsley (if using), and serve hot.

Tips

  • For extra crispiness, soak the cut potatoes in cold water for 15-30 minutes before patting them completely dry and tossing with oil. This removes excess starch.
  • Avoid overcrowding the baking sheet; if making a larger batch, use two sheets.
  • A pinch of smoked paprika can add a lovely depth of flavor to the potatoes.
