For the Stir-Fry

  • 8 oz dried linguine or ramen noodles
  • 1 tbsp vegetable oil
  • 1 lb pork tenderloin or boneless pork chops, thinly sliced
  • 1 bell pepper (any color), thinly sliced
  • 1 cup snap peas or broccoli florets
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated

For the Sauce

  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce (or hoisin for vegetarian)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water

For Garnish (Optional)

  • Sesame seeds
  • Sliced green onions

Preparation

  1. Step 1

    Cook noodles according to package directions. Drain, rinse with cold water to prevent sticking, and set aside.

  2. Step 2

    Prepare the sauce: In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, brown sugar, and sesame oil. In a separate tiny bowl, whisk cornstarch and water until smooth to create a slurry.

  3. Step 3

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add sliced pork and stir-fry for 3-4 minutes until browned and cooked through. Remove pork from skillet and set aside.

  4. Step 4

    Add bell pepper and snap peas (or broccoli) to the skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender. Add minced garlic and grated ginger and stir-fry for 1 minute until fragrant.

  5. Step 5

    Return cooked pork to the skillet. Pour in the prepared sauce, then stir in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.

  6. Step 6

    Add the cooked and drained noodles to the skillet. Toss everything together until the noodles are fully coated in the sauce. Serve immediately, garnished with sesame seeds and green onions if desired.

Tips

  • Prep all your ingredients (chop veggies, slice meat, mix sauce) before you start cooking, as stir-fries cook very quickly.
  • If you don't have fresh ginger, 1/2 teaspoon of ground ginger can be substituted, but fresh offers a brighter flavor.
