Weeknight Pork and Apple Skillet

Embrace the cozy flavors of autumn any time of year with this delightful Weeknight Pork and Apple Skillet! This recipe brings together tender pork, sweet-tart apples, and caramelized onions in one pan for a meal that's both comforting and incredibly quick to prepare. It's simple enough for a busy weeknight, yet special enough to feel like a treat.

Ingredients

Yield: 2 servings

Main

  • 1 tbsp olive oil
  • 1 lb pork tenderloin, cut into 1-inch medallions
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 medium onion, thinly sliced
  • 1 large apple (like Honeycrisp or Granny Smith), cored and sliced
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup or brown sugar
  • 2 tbsp chicken broth
  • Fresh thyme leaves, for garnish (optional)

Preparation

  1. Step 1

Season pork medallions generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat.

  2. Step 2

Add pork to the hot skillet and cook for 2-3 minutes per side, until nicely browned. Remove pork from skillet and set aside on a plate.

  3. Step 3

Reduce heat to medium. Add sliced onion and apple to the skillet. Cook for 5-7 minutes, stirring occasionally, until softened and lightly caramelized.

  4. Step 4

In a small bowl, whisk together apple cider vinegar, Dijon mustard, maple syrup (or brown sugar), and chicken broth. Pour this sauce over the onions and apples in the skillet. Bring to a simmer, scraping up any browned bits from the bottom of the pan.

  5. Step 5

Return the cooked pork to the skillet, nestled into the sauce, apples, and onions. Cook for another 3-5 minutes, or until the pork is fully cooked through and the sauce has thickened slightly. Garnish with fresh thyme, if desired, and serve immediately.

Tips

  • Use pork chops instead of tenderloin (adjust cooking time slightly for thickness).
  • Add a pinch of cinnamon or nutmeg to the apples for extra autumnal flavor.
  • Serve this delicious skillet meal with a side of rice, quinoa, or crusty bread to soak up the sauce.
