Weeknight Garlic Herb Pork Tenderloin

Pork tenderloin is one of our favorite cuts for a speedy, elegant dinner, and this Garlic Herb version is a prime example! It's incredibly tender, infused with aromatic garlic and herbs, and roasts up in a flash. Pair it with your favorite sides for a meal that feels special without any fuss.

Ingredients

Yield: 4 servings

Main

  • 1 (1-1.5 lb) pork tenderloin, trimmed of silver skin
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: Fresh chopped parsley for garnish

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup.

  2. Step 2

In a small bowl, combine minced garlic, dried rosemary, dried thyme, salt, and black pepper.

  3. Step 3

Pat the pork tenderloin dry with paper towels. Drizzle with olive oil, then rub the garlic-herb mixture all over the tenderloin, pressing gently to adhere.

  4. Step 4

Place the seasoned pork tenderloin on the prepared baking sheet.

  5. Step 5

Roast for 20-25 minutes, or until an internal temperature of 145°F (63°C) is reached. Cooking time will vary based on the thickness of your tenderloin.

  6. Step 6

Remove from oven and tent loosely with foil. Let rest for 5-10 minutes before slicing into 1/2-inch thick medallions. Garnish with fresh parsley, if desired, and serve.

Tips

  • Don't skip the resting step; it allows the juices to redistribute, ensuring a more tender and moist pork.
  • For a delicious pan sauce, deglaze the baking sheet with a splash of chicken broth after removing the pork, scraping up any browned bits.
  • Serve with roasted vegetables, mashed potatoes, or a simple green salad.
