Ingredients
Yield: 4 servings
For the Chicken
- 1 tbsp olive oil
- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- Salt and black pepper to taste
For the Honey Garlic Sauce
- 1/2 cup low-sodium chicken broth
- 1/4 cup honey
- 3 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger (optional, but highly recommended)
- 1 tsp cornstarch mixed with 1 tbsp cold water
For Serving
- Cooked rice or quinoa
- Steamed broccoli or edamame
- Sesame seeds (for garnish)
- Sliced green onions (for garnish)
Preparation
Step 1
Heat olive oil in a large skillet or wok over medium-high heat. Season chicken pieces with salt and pepper. Add chicken to the skillet and cook, stirring occasionally, until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Step 2
In a small bowl, whisk together chicken broth, honey, soy sauce, minced garlic, and grated ginger (if using). Pour this mixture into the same skillet. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
Step 3
Whisk the cornstarch slurry (cornstarch mixed with water) into the simmering sauce. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and becomes glossy. If it gets too thick, add a splash more chicken broth.
Step 4
Return the cooked chicken to the skillet, tossing to coat thoroughly in the sticky honey-garlic sauce.
Step 5
Serve immediately over cooked rice or quinoa, alongside steamed broccoli or edamame. Garnish with sesame seeds and sliced green onions.
Tips
- Don't overcrowd the pan when cooking chicken; cook in batches if necessary to ensure it browns nicely.
- Fresh ginger adds a wonderful zing to the sauce, but you can omit it if you don't have it.
- The sauce can be made ahead of time and stored in the fridge for up to 3 days.
