Ingredients
Yield: 3 servings
For the Sauce
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tbsp sriracha (or more, to taste)
- 1 tsp grated fresh ginger
- 1 clove garlic, minced
- 1 tsp cornstarch
For the Stir-Fry
- 1 tbsp vegetable oil
- 1 lb large shrimp, peeled and deveined
- 1 head broccoli, cut into small florets
- 1 red bell pepper, thinly sliced
- 1/2 yellow onion, thinly sliced
- Cooked rice or noodles, for serving
- Sesame seeds and sliced green onions, for garnish (optional)
Preparation
Step 1
In a small bowl, whisk together all sauce ingredients (soy sauce, honey, rice vinegar, sriracha, ginger, garlic, cornstarch) until smooth. Set aside.
Step 2
Heat vegetable oil in a large skillet or wok over medium-high heat. Add broccoli florets and stir-fry for 3-4 minutes until bright green and slightly tender-crisp. Add red bell pepper and onion, and stir-fry for another 2-3 minutes.
Step 3
Push vegetables to one side of the skillet. Add shrimp to the empty side and cook for 1-2 minutes per side, until pink and opaque. Do not overcook.
Step 4
Pour the prepared sauce over the shrimp and vegetables. Stir everything together and cook for 1-2 minutes, or until the sauce thickens and coats the ingredients. Make sure to scrape up any bits from the bottom of the pan.
Step 5
Serve immediately over cooked rice or noodles, garnished with sesame seeds and green onions, if desired.
Tips
- Have all your ingredients prepped and ready before you start cooking, as stir-fries cook very quickly.
- If you prefer less heat, reduce the amount of sriracha in the sauce, or omit it entirely for a sweet and savory sauce.
