For the Stir-Fry
- 1 lb pork loin or tenderloin, thinly sliced against the grain
- 1 tbsp cornstarch
- 1 tbsp soy sauce
- 2 tbsp vegetable oil, divided
- 1 head broccoli, cut into small florets
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned or thinly sliced
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
For the Sweet & Spicy Sauce
- 1/4 cup soy sauce
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 1 tsp sriracha (or more, to taste)
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1/4 cup water or chicken broth
For Serving
- Cooked rice or noodles
- Sesame seeds, for garnish
- Sliced green onions, for garnish
Preparation
Step 1
In a medium bowl, combine the sliced pork, 1 tablespoon cornstarch, and 1 tablespoon soy sauce. Toss to coat and set aside for at least 10 minutes.
Step 2
Prepare the sauce: In a small bowl, whisk together 1/4 cup soy sauce, honey/brown sugar, rice vinegar, sriracha, sesame oil, 1 teaspoon cornstarch, and water/broth until smooth.
Step 3
Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the pork in a single layer and cook for 2-3 minutes per side, until browned and cooked through. Remove pork from skillet and set aside.
Step 4
Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the broccoli, red bell pepper, and carrot. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.
Step 5
Add the minced garlic and grated ginger to the skillet. Stir-fry for 30 seconds until fragrant.
Step 6
Return the cooked pork to the skillet with the vegetables. Give the sauce a quick whisk (to re-incorporate the cornstarch) and pour it over the pork and vegetables. Cook, stirring constantly, for 1-2 minutes, until the sauce thickens and coats everything nicely.
Step 7
Serve immediately over cooked rice or noodles, garnished with sesame seeds and green onions if desired.
