  • 1 tbsp olive oil
  • 1 lb spicy Italian sausage, casings removed (or sweet Italian sausage + red pepper flakes)
  • 1 small yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can cannellini beans (white kidney beans), rinsed and drained
  • 1/2 cup chicken or vegetable broth
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the sausage (removed from casings) and break it up with a spoon. Cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Drain any excess grease and transfer sausage to a plate, leaving a little grease in the pan.

    Add chopped onion and red bell pepper to the skillet. Cook, stirring occasionally, until softened, about 5-7 minutes.

    Stir in the minced garlic and cook for 1 minute more until fragrant.

  4. Step 4

    Return the cooked sausage to the skillet. Add the diced tomatoes (undrained), rinsed and drained cannellini beans, chicken broth, and dried oregano. Stir to combine.

  5. Step 5

    Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.

  6. Step 6

    Season with salt and freshly ground black pepper to taste. Garnish with fresh parsley if desired, and serve warm.
