Ingredients
Yield: 6 servings
Main
- 1 tbsp olive oil
- 1/2 lb spicy Italian sausage, casings removed
- 1 small yellow onion, chopped
- 1 large bell pepper (any color), chopped
- 2 cloves garlic, minced
- 8 large eggs
- 1/4 cup milk or half-and-half
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup shredded cheddar or Monterey Jack cheese
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Preheat oven to 350°F (175°C). Use an oven-safe, non-stick skillet (about 10-inch) or a cast iron skillet.
Step 2
Heat olive oil in the skillet over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set sausage aside.
Step 3
Add chopped onion and bell pepper to the same skillet. Cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
Step 4
Return cooked sausage to the skillet with the vegetables. Spread evenly across the bottom of the pan.
Step 5
In a medium bowl, whisk together eggs, milk (or half-and-half), salt, and pepper until well combined. Pour the egg mixture evenly over the sausage and vegetables in the skillet.
Step 6
Cook on the stovetop for 2-3 minutes until the edges of the frittata begin to set. Sprinkle with shredded cheese.
Step 7
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed, set in the center, and lightly golden. A knife inserted near the center should come out clean.
Step 8
Remove from oven, let cool for a few minutes, then slice into wedges and serve. Garnish with fresh parsley if desired.
Tips
- Make sure your skillet is oven-safe! Cast iron or an entirely metal skillet works best.
- For extra kick, add a pinch of red pepper flakes with the garlic and onions.
