For the Stir-Fry

  • 1 tbsp sesame oil or vegetable oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1/2 cup shredded carrots
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger

For the Spicy Peanut Sauce

  • 1/2 cup creamy peanut butter
  • 2 tbsp soy sauce (reduce-sodium if preferred)
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1-2 tsp Sriracha or chili garlic sauce (adjust to taste)
  • 1/2 tsp fresh grated ginger (optional)
  • 1/4 cup warm water (or more, to reach desired consistency)

For Serving

  • Cooked rice or noodles
  • Crushed peanuts, for garnish (optional)
  • Fresh cilantro, chopped, for garnish (optional)

Preparation

  1. Step 1

    First, make the peanut sauce: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, Sriracha, and grated ginger (if using). Slowly whisk in warm water, 1 tablespoon at a time, until the sauce is smooth and reaches your desired consistency (it should be pourable but not too thin). Set aside.

  2. Step 2

    Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until browned on all sides and mostly cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

  3. Step 3

    Add bell pepper, broccoli florets, snap peas, and shredded carrots to the same skillet. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.

  4. Step 4

    Add minced garlic and grated ginger to the vegetables and stir-fry for 1 minute until fragrant.

  5. Step 5

    Return the cooked chicken to the skillet with the vegetables. Pour the spicy peanut sauce over the chicken and vegetables. Toss everything together until well coated and heated through, about 1-2 minutes.

  6. Step 6

    Serve immediately over cooked rice or noodles. Garnish with crushed peanuts and fresh cilantro, if desired.

Tips

  • Adjust the spice level by adding more or less Sriracha to the peanut sauce.
