For the Wraps

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, thinly sliced or cut into strips
  • 8 large flour tortillas
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • ½ cup chopped fresh cilantro
  • ¼ cup chopped roasted peanuts (optional, for crunch)

Preparation

  1. Step 1

    First, make the peanut sauce: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, grated ginger, and sriracha until smooth. Add warm water 1 tablespoon at a time until the sauce reaches a pourable, but still thick, consistency. Taste and adjust seasonings if needed.

    Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook, stirring occasionally, until cooked through and lightly browned, about 5-7 minutes. Season lightly with salt and pepper.

    Warm the tortillas according to package directions (microwave for 15-20 seconds or briefly in a dry skillet) to make them more pliable.
