Ingredients
Yield: 4 servings
For the Peanut Sauce
- ¼ cup creamy peanut butter
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp grated fresh ginger
- ½ tsp sriracha or chili garlic sauce (adjust to taste)
- 1-2 tbsp warm water (to thin)
For the Wraps
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts or thighs, thinly sliced or cut into strips
- 8 large flour tortillas
- 2 cups shredded red cabbage
- 1 cup shredded carrots
- ½ cup chopped fresh cilantro
- ¼ cup chopped roasted peanuts (optional, for crunch)
Preparation
Step 1
First, make the peanut sauce: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, grated ginger, and sriracha until smooth. Add warm water 1 tablespoon at a time until the sauce reaches a pourable, but still thick, consistency. Taste and adjust seasonings if needed.
Step 2
Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook, stirring occasionally, until cooked through and lightly browned, about 5-7 minutes. Season lightly with salt and pepper.
Step 3
Warm the tortillas according to package directions (microwave for 15-20 seconds or briefly in a dry skillet) to make them more pliable.
Step 4
To assemble the wraps: Lay out a tortilla. Spread a spoonful of peanut sauce down the center. Top with a portion of cooked chicken, shredded red cabbage, shredded carrots, and cilantro.
Step 5
Fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with remaining tortillas and fillings.
Step 6
Serve immediately, perhaps with extra peanut sauce for dipping, and a sprinkle of chopped peanuts for added crunch.
Tips
- Want to make it vegetarian? Swap the chicken for pan-fried tofu or roasted chickpeas!
- You can prep the sauce and chop the veggies ahead of time for even quicker assembly.
