For the Peanut Sauce

  • ½ cup creamy peanut butter
  • 3 tbsp soy sauce (low sodium preferred)
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp sriracha or chili garlic sauce (adjust to taste)
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • ¼ cup warm water (or more, to thin)

For the Stir-Fry

  • 1 tbsp vegetable oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 large head of broccoli, cut into small florets
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • Cooked rice or noodles, for serving
  • Sesame seeds and chopped green onions, for garnish (optional)

Preparation

  1. Step 1

    Prepare the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sriracha, ginger, garlic, and warm water until smooth. Add more water if needed to reach your desired consistency. Set aside.

  2. Step 2

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

  3. Step 3

    Add broccoli florets and bell pepper slices to the same skillet. Cook for 3-5 minutes, stirring frequently, until vegetables are tender-crisp. Add snap peas and cook for another 1-2 minutes.

  4. Step 4

    Return the cooked chicken to the skillet with the vegetables. Pour the prepared peanut sauce over the ingredients and toss to coat everything evenly. Cook for 1-2 minutes, allowing the sauce to warm through and thicken slightly.

    Serve immediately over cooked rice or noodles, garnished with sesame seeds and green onions, if desired.
