  • 2-3 tbsp warm water, to thin

For Serving

  • Cooked rice or cauliflower rice
  • Chopped green onions
  • Chopped peanuts
  • Lime wedges

Preparation

  1. Step 1

    In a medium bowl, combine ground pork with 1 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp ginger, 1 clove minced garlic, and red pepper flakes (if using). Mix well.

    Prepare the peanut sauce: In a separate small bowl, whisk together peanut butter, 2 tbsp soy sauce, 1 tbsp rice vinegar, honey, 1 tsp ginger, and 1 clove minced garlic. Gradually whisk in warm water, 1 tablespoon at a time, until the sauce reaches a smooth, pourable consistency.

    Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat. Add the seasoned ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.

    To assemble: Divide cooked rice among serving bowls. Top with the cooked spiced pork. Drizzle generously with peanut sauce.
