- 1 (5 oz) can tuna in water or oil, drained
- 1/2 cup canned cannellini beans, rinsed and drained
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 celery stalk, finely diced
- 1 tbsp red onion, minced
- 1 tbsp fresh parsley, chopped
- 1/4 tsp black pepper
- Pinch of salt
- 4 slices bread (sourdough, whole wheat, or white)
- 2 slices cheddar or provolone cheese
- 1 tbsp butter or olive oil for toasting
Preparation
Step 1
In a medium bowl, flake the drained tuna. Add the rinsed cannellini beans and mash them gently with a fork, leaving some whole for texture.
Step 2
Stir in mayonnaise, Dijon mustard, diced celery, minced red onion, chopped parsley, black pepper, and a pinch of salt. Mix well to combine.
Step 3
Heat butter or olive oil in a large skillet over medium heat. Place two slices of bread in the skillet. Spread half of the tuna-bean mixture onto each slice of bread. Top each with a slice of cheese.
Step 4
Place the remaining two slices of bread on top to form sandwiches. Cook for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly. Press down gently with a spatula to encourage even browning.
Step 5
Remove from skillet, slice in half, and serve hot. Enjoy!
Tips
