  • 1 lb ground pork
  • 4 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 6 cups chicken broth
  • ¼ cup soy sauce (low sodium preferred)
  • 2 tbsp mirin (or substitute with 1 tbsp sugar + 1 tbsp water)
  • 1-2 tbsp chili garlic sauce or sriracha (to taste)
  • 2 packs instant ramen noodles (discard seasoning packets)
  • 2 large eggs, soft-boiled and halved (optional)
  • 2 cups baby spinach or chopped bok choy
  • Sliced green onions, for garnish
  • Toasted sesame seeds, for garnish

Preparation

  1. Step 1

    Heat sesame oil in a large pot or Dutch oven over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

    Add minced garlic and grated ginger to the pot with the pork. Cook for 1 minute until fragrant, stirring constantly.

  3. Step 3

    Pour in chicken broth, soy sauce, mirin, and chili garlic sauce/sriracha. Bring to a boil, then reduce heat and simmer for 5 minutes to allow flavors to meld.

    Add the ramen noodles (without seasoning packets) to the simmering broth. Cook according to package directions, usually 2-3 minutes, until tender.

    Stir in the baby spinach or chopped bok choy and cook until just wilted, about 1-2 minutes.

    Ladle the ramen into bowls. Top each serving with a halved soft-boiled egg, sliced green onions, and toasted sesame seeds. Serve immediately.
