Ingredients
Yield: 4 servings
Main
- 1 tbsp sesame oil
- 1 lb ground pork
- 4 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 6 cups chicken broth
- ¼ cup soy sauce (low sodium preferred)
- 2 tbsp mirin (or substitute with 1 tbsp sugar + 1 tbsp water)
- 1-2 tbsp chili garlic sauce or sriracha (to taste)
- 2 packs instant ramen noodles (discard seasoning packets)
- 2 large eggs, soft-boiled and halved (optional)
- 2 cups baby spinach or chopped bok choy
- Sliced green onions, for garnish
- Toasted sesame seeds, for garnish
Preparation
Step 1
Heat sesame oil in a large pot or Dutch oven over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
Step 2
Add minced garlic and grated ginger to the pot with the pork. Cook for 1 minute until fragrant, stirring constantly.
Step 3
Pour in chicken broth, soy sauce, mirin, and chili garlic sauce/sriracha. Bring to a boil, then reduce heat and simmer for 5 minutes to allow flavors to meld.
Step 4
Add the ramen noodles (without seasoning packets) to the simmering broth. Cook according to package directions, usually 2-3 minutes, until tender.
Step 5
Stir in the baby spinach or chopped bok choy and cook until just wilted, about 1-2 minutes.
Step 6
Ladle the ramen into bowls. Top each serving with a halved soft-boiled egg, sliced green onions, and toasted sesame seeds. Serve immediately.
Tips
- Adjust the amount of chili garlic sauce to your preferred spice level.
- For a richer broth, use a good quality low-sodium chicken or mushroom broth.
- Feel free to add other quick-cooking veggies like sliced mushrooms, corn, or shredded carrots.
