  • 1 tbsp olive oil
  • 1 lb smoked sausage (kielbasa or similar), sliced into ½-inch rounds
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked white rice (long-grain or jasmine)
  • 2 cups chicken or vegetable broth
  • ½ tsp paprika
  • ¼ tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add sliced sausage and cook until lightly browned, about 3-5 minutes. Remove sausage from skillet and set aside, leaving rendered fat in the pan.

  2. Step 2

    Add onion and bell pepper to the skillet and cook until softened, about 5-7 minutes. Stir in garlic, paprika, and thyme, and cook for 1 minute more until fragrant.

  3. Step 3

    Stir in uncooked rice, coating it with the pan juices. Pour in broth, scraping up any browned bits from the bottom of the pan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until most liquid is absorbed and rice is almost tender.

  4. Step 4

    Stir the cooked sausage back into the rice. Cover and continue to cook for another 5 minutes, or until rice is fully cooked and fluffy. Season with salt and pepper to taste. Garnish with fresh parsley, if using, and serve warm.

Tips

  • For a spicier kick, add a pinch of red pepper flakes with the paprika and thyme.
  • Any type of smoked sausage works well here! Chicken or turkey sausage are great alternatives.
  • If you like a bit of a crust on your rice, uncover for the last few minutes of cooking at a slightly higher heat.
