Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 lb Italian sausage (sweet or spicy), casings removed
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo pasta
  • 3 cups chicken broth
  • 1 (14.5-oz) can diced tomatoes, undrained
  • 5 oz fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Red pepper flakes, for serving (optional)

Preparation

  1. Step 1

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Drain off any excess grease and remove sausage from skillet, leaving about 1 tbsp of drippings.

  2. Step 2

Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.

  3. Step 3

Stir in uncooked orzo and toast for 1-2 minutes, stirring frequently.

  4. Step 4

Pour in chicken broth and undrained diced tomatoes. Bring to a simmer. Return the cooked sausage to the skillet. Cover, reduce heat to medium-low, and cook for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed, stirring occasionally.

  5. Step 5

Remove from heat. Stir in fresh spinach until wilted. Stir in grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.

  6. Step 6

Serve hot, garnished with a sprinkle of red pepper flakes if desired.

Tips

  • To add more veggies, stir in a handful of chopped bell peppers or zucchini with the onion.
  • If you're out of fresh spinach, frozen spinach (thawed and squeezed dry) works perfectly too.
