  • 1 lb boneless pork loin or tenderloin, thinly sliced against the grain
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 1 carrot, thinly sliced or julienned
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • For the Sauce:
  • 1/4 cup soy sauce (low sodium)
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 1/4 cup chicken broth
  • Optional: Cooked rice or noodles for serving, sesame seeds and green onions for garnish

Preparation

  1. Step 1

    In a medium bowl, toss the thinly sliced pork with cornstarch until evenly coated. This helps tenderize the pork and thicken the sauce.

  2. Step 2

    Prepare the sauce: In another small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, and chicken broth. Set aside.

  3. Step 3

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the pork and stir-fry for 3-4 minutes until lightly browned and cooked through. Remove pork from the skillet and set aside.

    Add red bell pepper, snap peas, and carrot to the skillet. Stir-fry for 3-4 minutes until vegetables are crisp-tender. Add minced garlic and grated ginger and stir-fry for another minute until fragrant.

    Return the cooked pork to the skillet with the vegetables. Give the sauce a quick re-whisk and pour it over everything. Bring to a simmer, stirring constantly, until the sauce thickens and coats the pork and vegetables, about 1-2 minutes.
