Ingredients

Yield: 4 servings

Main

  • 1 tablespoon olive oil
  • 1 lb ground pork
  • 1 yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar or honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Cooked rice, for serving

For Serving (Optional Toppings)

  • Sliced green onions
  • Sesame seeds
  • Shredded carrots
  • Diced cucumber
  • Kimchi or sriracha mayo

Preparation

  1. Step 1

Heat olive oil in a large skillet or wok over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain off any excess grease.

  2. Step 2

Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

  3. Step 3

In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar (or honey), sesame oil, and red pepper flakes (if using). Pour the sauce over the pork mixture in the skillet.

  4. Step 4

Bring the sauce to a simmer and cook for 2-3 minutes, stirring occasionally, until the sauce has thickened slightly and coats the pork. Taste and adjust seasoning if needed.

  5. Step 5

Serve the saucy pork mixture immediately over bowls of cooked rice. Garnish with sliced green onions, sesame seeds, shredded carrots, or diced cucumber, and a dollop of kimchi or sriracha mayo if desired.

Tips

  • For an extra veggie boost, stir in a handful of fresh spinach or frozen peas with the sauce in the last minute of cooking.
  • Make sure your rice is cooked and ready to go before you start the pork, as the pork comes together so quickly!
