Ingredients
Yield: 4 servings
For the Pork
- 1 lb boneless pork loin or tenderloin, thinly sliced into bite-sized pieces
- 1 tbsp cornstarch
- 1 tbsp soy sauce (low sodium preferred)
For the Sauce
- 1/4 cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 1 tsp grated fresh ginger
- 1/2 tsp garlic powder
For the Stir-Fry
- 1 tbsp vegetable oil
- 4 cups green cabbage, thinly sliced
- 1 small onion, thinly sliced
- 2 carrots, julienned or thinly sliced
- Cooked rice for serving
Preparation
Step 1
In a medium bowl, toss the thinly sliced pork with cornstarch and 1 tbsp soy sauce. Set aside while you prep other ingredients.
Step 2
In a small bowl, whisk together all sauce ingredients: chicken broth, 2 tbsp soy sauce, rice vinegar, brown sugar, sesame oil, grated ginger, and garlic powder. Set aside.
Step 3
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the pork and stir-fry for 3-4 minutes, until cooked through and lightly browned. Remove pork from the skillet and set aside, leaving any drippings in the pan.
Step 4
Add cabbage, sliced onion, and carrots to the skillet. Stir-fry for 3-5 minutes, until vegetables are crisp-tender. They should still have a nice bite.
Step 5
Return the cooked pork to the skillet with the vegetables. Give the whisked sauce a quick stir and pour it over everything. Cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the pork and vegetables.
Step 6
Serve immediately over cooked rice. Garnish with sesame seeds or chopped green onions if desired.
Tips
- Thinly slicing the pork is crucial for a quick-cooking stir-fry. Partially freezing the pork for about 20 minutes can make it easier to slice.
- Don't overcrowd the pan when cooking the pork; cook in batches if necessary to ensure it browns instead of steaming.
- Prep all your ingredients (mise en place!) before you start cooking, as stir-fries cook very quickly.
