Ingredients
Yield: 4 servings
Main
- 1 tbsp vegetable oil
- 1 lb ground pork (or ground turkey/chicken)
- 1 medium onion, thinly sliced
- 4 cups green cabbage, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger (optional)
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes (optional, for heat)
- Salt and freshly ground black pepper to taste
- Cooked rice or noodles, for serving
- Chopped green onions, for garnish
Preparation
Step 1
Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain off any excess fat and set pork aside.
Step 2
Add thinly sliced onion to the skillet and cook until softened and lightly caramelized, about 5 minutes. Add the sliced cabbage and cook, stirring occasionally, until it wilts and becomes tender, about 5-7 minutes.
Step 3
Stir in minced garlic and grated ginger (if using). Cook for 1 minute until fragrant.
Step 4
In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sesame oil, and red pepper flakes (if using).
Step 5
Return the cooked pork to the skillet. Pour the sauce over the pork and cabbage mixture. Toss to coat everything evenly. Cook for 2-3 minutes, allowing the sauce to thicken slightly.
Step 6
Season with salt and pepper to taste. Serve hot over cooked rice or noodles, garnished with chopped green onions.
Tips
- For a vegetarian version, substitute ground pork with a firm block of crumbled tofu or extra mushrooms.
- Don't skip the step of browning the pork well – it adds a lot of flavor.
- If you like more crunch, add a handful of shredded carrots along with the cabbage.
