  • 1 lb pork tenderloin, thinly sliced against the grain
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 large bell pepper (any color), thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • Cooked rice, for serving

For the Sauce

  • 1/4 cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp toasted sesame oil
  • 1 tsp cornstarch

Preparation

  1. Step 1

    In a medium bowl, toss sliced pork with 1 tbsp cornstarch and 1 tbsp soy sauce. Set aside.

  2. Step 2

    In a small bowl, whisk together all sauce ingredients (chicken broth, 2 tbsp soy sauce, rice vinegar, brown sugar, sesame oil, and 1 tsp cornstarch) until smooth. Set aside.

    Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add pork and stir-fry for 3-4 minutes until lightly browned and cooked through. Remove pork from skillet and set aside.

  4. Step 4

    Add sliced bell pepper and onion to the skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender. Add minced garlic and grated ginger, and stir-fry for 1 minute more until fragrant.

  5. Step 5

    Return cooked pork to the skillet. Give the prepared sauce a quick whisk, then pour it over the pork and vegetables. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything evenly.

  6. Step 6

    Serve immediately over hot cooked rice.
