For the Pork
- 1 lb pork loin or tenderloin, thinly sliced against the grain
- 1 tbsp cornstarch
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Sauce
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 1 tsp grated fresh ginger (or 1/2 tsp dried ginger)
- 1 clove garlic, minced
- 1/4 cup water or chicken broth
- 1 tsp cornstarch (for sauce thickening)
For the Stir-Fry
- 2 tbsp vegetable oil
- 2 large bell peppers (any color), thinly sliced
- 1/2 small onion, thinly sliced
- Cooked rice or noodles, for serving
Preparation
Step 1
Pat pork slices dry with paper towels. In a medium bowl, toss pork with 1 tbsp cornstarch, salt, and pepper until evenly coated.
Step 2
In a separate small bowl, whisk together all sauce ingredients: soy sauce, rice vinegar, brown sugar, sesame oil, ginger, garlic, water/broth, and 1 tsp cornstarch. Set aside.
Step 3
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add pork in a single layer (cook in batches if necessary to avoid overcrowding). Cook for 2-3 minutes per side until browned and cooked through. Remove pork and set aside.
Step 4
Add the remaining 1 tbsp vegetable oil to the skillet. Add sliced bell peppers and onion. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.
Step 5
Give the prepared sauce a quick whisk again, then pour it into the skillet with the vegetables. Cook, stirring constantly, until the sauce thickens and coats the vegetables, about 1-2 minutes.
Step 6
Return the cooked pork to the skillet and toss to coat everything in the sauce. Cook for just 1 minute to heat through. Serve immediately over cooked rice or noodles.
