For the Sauce
- ¼ cup soy sauce (or tamari for gluten-free)
- 2 tbsp oyster sauce (or hoisin for vegetarian option)
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp toasted sesame oil
- 1 tsp grated fresh ginger
- ½ tsp minced garlic
- 1 tbsp cornstarch
- ¼ cup water
For the Stir-Fry
- 1 tbsp vegetable oil
- 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
- 1 head broccoli, cut into small florets
- 1 red bell pepper, thinly sliced
- 1 cup snap peas
- Cooked rice or noodles, for serving
Preparation
Step 1
In a small bowl, whisk together all sauce ingredients (soy sauce, oyster sauce, rice vinegar, brown sugar, sesame oil, ginger, garlic, cornstarch, and water) until smooth. Set aside.
Step 2
Heat vegetable oil in a large skillet or wok over medium-high heat. Add sliced chicken and cook, stirring occasionally, until cooked through and lightly browned, about 3-5 minutes. Remove chicken from the pan and set aside.
Step 3
Add broccoli florets and red bell pepper slices to the same skillet (add another splash of oil if needed). Stir-fry for 3-4 minutes until vegetables are tender-crisp. Add snap peas and stir-fry for 1-2 minutes more.
Step 4
Return the cooked chicken to the skillet with the vegetables. Give the sauce a quick whisk (as cornstarch can settle) and pour it over the chicken and vegetables.
Step 5
Stir everything together constantly for 1-2 minutes, allowing the sauce to thicken and coat all the ingredients. Remove from heat immediately.
Step 6
Serve hot over cooked rice or noodles. Garnish with sesame seeds or sliced green onions if desired.
